Afternoon and thanks for the question. I don't think we have much information here to be able to help but the best place to start would be with a psychologist visit so they can help you make the right decision.

Sorry that we are not able to help with more information.
Just your friendly neighbourhood guy.

I believe there are also some Transgender support groups in Israel, and I'd try reaching out to them for what clinics they have found useful... In practical terms pretty much all the doctors that are willing to do castrations / penectomies are also the ones that do binary transition surgery, and most of the SOCv8 hoops one needs pass in order to get OK'd for surgery are the same, so you are looking for the same kind of people....
Paraplegic - T-5, ASIA-B. 2010 Injury left non-functional & frustrated. 4/24/22, stop T. 5/4 start 3.75mg Lupron. 6/29 - T ~0. 7/7 - start E. 9/2 stop Lupron. 3/30/23 - GOT LETTERS! surgery (O&S) 9/28/23. Doing 0.75mg/day E patch as HRT

OK... It is something that I've seen other guys (and I initially had the same issue) that want to be castrated who didn't feel comfortable being labeled as "Transgender" or possibly even as part of the LGBTQIA+ world... However the medical / psych world drops us into that box, so we have to deal with it.

So if you go to a doctor and ask for a referral to a surgeon that can castrate you, you are going to be sent to a transgender clinic...

That means that among other things the WPATH (World Professional Association for Transgender Health) Standards of Care version 8 aka the SOCv8 requires us to go through the same sorts of evaluation that any other transgender person would.

This is why one of my standard pieces of advice to those starting on this path is to reach out to any of your local transgender support groups as they can point you at the appropriate places where you live....

I'm not at all familiar with Israeli groups, so can't say anything about how good or bad they are, but a quick startpage search pointed me at the following

https://lgbtolim.org/health-services/
https://www.tasmc.org.il/

I hope this is useful in helping you get started...
